Intel Core processors are generally better than Intel Pentium processors. The difference is in performance and price. It can be seen on the recent high ranked processors released in 2022:
Intel Core i9-12900 - 8 + 8 cores, 16 + 8 threads, L3 cache 30 MB
Intel Pentium Gold G7400 - 2 cores, 4 threads, L3 cache 6 MB
If you compare Intel Core i3 (12th Generation) and Intel Pentium Silver N6000, then i3 is considered to be better, because it is newer, has more threads, higher cache etc.
But if you compare Intel Core i3 (10th or 11th generation) and Intel Pentium Silver N6000, you can find out, that some Intel Core i3 processors have 2 cores / 4 threads and Intel Pentium Silver N6000 has 4 cores / 4 threads.
After testing laptops with Intel Core i3-1005G1 and Intel Pentium Silver N6000, I would say i3 with 2 cores is a bit better than N6000 with 4 cores. You should check the CPU benchmark comparison.
